How to make a Macaroni Salad for All Season (2018)

A classic macaroni salad is always a hit at any potluck party. This version is studded with an array of colorful veggies for a pleasing presentation.

1/4 c. mayonnaise
1/4 c. lowfat sour cream
2 tbsp. fresh lime juice
peppers (1 each red, orange, and green)
fresh corn kernels
1/4 c. finely chopped pickled sweet red cherry peppers (such as Peppadews)
1/2 c. roughly chopped fresh cilantro
- Cook the pasta according to package directions. Drain and run under cold water to cool.
- In a large bowl, whisk together the mayonnaise, sour cream, lime juice, and 1/2 teaspoon each salt and pepper.
- Add the cooled macaroni and toss to coat. Fold in the peppers, celery, corn, scallions, cherry peppers, cilantro, and jalapeño.
